F | 　　每年的小龙虾上市季，很多“吃货”“老饕”都拒绝不了小龙虾的诱惑——五花八门的做法，鲜嫩弹牙的虾肉……看着球赛，喝着冰啤酒，吃着小龙虾成了不少人消夏的选择。▲图源：卡乐图片 贾琼 摄　　小龙虾的虾头能不能吃？　　小龙虾虾头能不能吃，这个问题足以引发小龙虾拥趸们“唇枪舌剑”。一些消费者认为，虾头内的“虾黄”是虾卵，具有很高的营养价值。　　而据华中农业大学水产学院教授顾泽茂介绍，小龙虾虾头内的“虾黄”，不论公虾、母虾都有，所以，“虾黄即虾卵”一说并不成立。其实，所谓的“虾黄”是小龙虾的肝胰腺，即小龙虾的解毒器官。如果小龙虾生活的水域中存在重金属、污染物、寄生虫等，往往会通过虾的摄食或呼吸活动进入其头部。　　此外，小龙虾头部除了有肝胰腺，还有胃、鳃等，这些都是虾体吸收并处理毒素的器官，也是最易积聚重金属、病原菌和寄生虫的部分。因此，从食用安全的角度看，建议只吃虾尾，少吃、不吃“虾黄”。　　小龙虾怎样烹饪才安全？▲图源：卡乐图片 宁颖 摄　　消费者日常购买的冷冻虾、小龙虾预制菜等如何处理才能放心食用呢？　　湖北省潜江市农业发展中心总工程师陶忠虎介绍，因为小龙虾体表和体内都含有污垢、寄生虫和病原菌，在加工之前要进行彻底清洗，虾头、虾线等部位可以直接去掉。如果不考虑美观，小龙虾的虾脚也可以去掉。市售的预包装小龙虾，通常是选新鲜小龙虾烹饪后速冻，只要保证冷链运输贮藏过程的低温，吃的时候重新加热至沸腾，就不必焦虑食品安全风险。　　华中农业大学水产学院教授顾泽茂提醒，在小龙虾的烹饪过程中，一定要保持高温，高温才能将其体内的细菌或寄生虫杀死。通常，寄生虫在70摄氏度煮至10分钟左右就会死亡。如果是100摄氏度的高温，杀死寄生虫的时间会更短。“关键是一定要把小龙虾煮熟煮透，确保食用安全。”　　比起将小龙虾煮熟煮透，更值得关注的是小龙虾配酒。

G | 专家提醒，小龙虾配酒不会“越喝越有”，反而容易引发痛风。其实不止小龙虾，其他一些鱼虾类产品也尽量不要与啤酒同时食用。　　专家解释，痛风的形成与嘌呤代谢和血液中的尿酸排泄障碍有关。
